Charred Asparagus and Crispy Sage

Serves 3-4

Asparagus is such a versitile vegetable. I love this minimal but delicious way to serve these beautiful stalks as a side accompaniment to any dish.

Ingredients

  • 6-10 sage leaves

  • 1-2 tbsp of olive oil

  • 1-2 bunches of asparagus

  • pinch of herb salt

  • 1 lemon (zest)

Method

An ideal pan for charring asparagus is a cast iron or a chargrill pan. Place the pan on a medium heat for 2-3 minutes to get it nice and hot.

Add 1 tbsp olive oil to the pan and drop in the sage leaves. They will crisp up in seconds. Remove from the pan and set aside.

Place the asparagus and a pinch of herb salt into the pan immediately afterwards, so that it soaks up that lovely sage flavour in the oil. Shake the pan every so often until the asparagus gets a little colour. This should take about 5-10 minutes.

Zest the lemon over the asparagus, drizzle with the remaining olive oil and serve.

Tip

Try topping the asparagus with some parmesan shavings or goat’s cheese.
