BAKED SALT

Arguably, the only goods people need these days are food and happiness.
— Terence Conran

Janie Fraser is the creative director and head chef behind Baked Salt, an immersive catering service based in London, inspired by her passion for creating memorable dining experiences. Rooted in the joy of gathering around a table, Baked Salt is all about savouring exciting flavours, sharing meaningful conversation, and creating experiences that evoke togetherness. Janie’s love for the long, laid-back dining of the Mediterranean has shaped her approach to re-creating these moments for her clients, where every event becomes an opportunity to bring people together with warmth and style.

Janie Fraser and Baked Salt

After finishing her diploma at Leiths with a specialism in Food and Wine in the mid 80’s, Janie’s career has brought her a journal of unique experiences; working at large, special events at the Victoria and Albert Museum with caterers Rhubarb, and then working within her locality in Barnes where her culinary influence was shaped at Sonny’s and Olympic Recording Studios. Moving further afield, Janie worked at the Clerkenwell Kitchen, and her later on her role as a listed caterer as Baked Salt at The Design Museum. However, Janie’s most inspirational position was working alongside New Zealand-born Chef Anna Hansen at The Modern Pantry.

“Being in Anna’s kitchen and developing my own cooking style further was the greatest learning experience. Anna’s completely fresh approach to food, along with her passion for flavour and spices, has stayed with me, as has her friendship.”
— Janie

These experiences sparked her light to culinary creativity, inspiring her to shape Baked Salt into something uniquely her own. Each dish is crafted with a twist: seasonal ingredients, bright touches of spice, and vibrant Mediterranean hues come together to make every meal both visually inviting and deliciously memorable.

The Beginnings of Baked Salt

Food, Drink and Design

Janie’s passion for design shines through in every detail, from the rustic vibes of her table settings, to the simplicity inspired by Finnish design and the precision inherited from her father, who was an architect. This aesthetic—modern yet timeless, bold yet understated—carries into her work, creating a warm, relaxed atmosphere that evokes togetherness.

I learnt so much from my dad’s meticulous attention to detail. I remember the beautiful leather brogues he wore and the clever storage solutions he created for our home. His natural affinity with thoughtful, quality design, coupled with his ability to keep its purpose front of mind, influenced not only my appreciation of design today, but also my own personal cooking style.

I also have clear memories of my mum making the type of meringues that oozed with sugar, and her sweet strawberry sorbet rippled with a handful of foraged blackberries. Her simple and honest approach to cooking is a precious ingredient that I carry with me today.
— Janie

Ensuring the best quality and sustainability of the produce used in her menus, Janie supports local artisans and sources ingredients from trusted suppliers, always aiming to bring the best of each season to the table. She views each event as a personal experience, ensuring that every aspect reflects her clients’ vision in a unique and meaningful way.
